Spaghetti squash is my favorite Fall vegetable, aside from pumpkin, of course. Spaghetti squash is very versatile, so easy to make (well, cutting it open can be a little tricky!) and such a great alternative to having pasta. When I go grocery shopping, I usually buy 2-3 spaghetti squashes to stock up and make sure that I don’t run out (yes, I love it that much!). So, for today’s What I Ate Wednesday, I thought I would share my four favorite ways to cook spaghetti squash and some that I can’t wait to try!
(my husband’s favorite way to eat the squash!)
Spaghetti Squash Burrito Bowls
Spaghetti Squash Asparagus Cheesy Casserole
Cilantro Lime Spaghetti Squash with Chicken
AND, here are four other recipes that I’ve pinned and can’t wait to try…
Thai Peanut Sauce Spaghetti Squash
Bacon Spaghetti Squash Fritters
Spaghetti Squash Pasta Primavera
Have a great Wednesday! Thanks, Jenn, for always hosting WIAW!

What is your favorite Fall vegetable?
Love me some spaghetti squash! I think the most interesting way I enjoy it is topped with sun butter, cinnamon and sea salt. Strange but good!
Ooh, that sounds good! I haven’t thought to eat it that way. I’ll have to try it!
