Spaghetti squash is my favorite Fall vegetable, aside from pumpkin, of course. Spaghetti squash is very versatile, so easy to make (well, cutting it open can be a little tricky!) and such a great alternative to having pasta. When I go grocery shopping, I usually buy 2-3 spaghetti squashes to stock up and make sure that I don’t run out (yes, I love it that much!). So, for today’s What I Ate Wednesday, I thought I would share my four favorite ways to cook spaghetti squash and some that I can’t wait to try!
