Last Friday, my husband and I were both craving burgers, so we decided to use the leftover salmon in our freezer and make salmon patties! They turned out so good that we will definitely be making them again!

Yield: 2 patties

Salmon Burgers

Ingredients

  • 8-12 oz of raw salmon, skin and bones removed, cut in 1" chunks
  • 1/4 cup of bread crumbs
  • 1/4 cup of almond flour
  • 1 egg
  • 1 minced clove of garlic
  • 1/2 tsp cumin
  • 1/2 tsp chili garlic paste.
  • 1/4 tsp pepper
  • olive oil for coating patties

Instructions

  1. Pulse salmon in food processor, just a little. It should be very rough.
  2. Add egg, most of the bread crumbs, almond flour and spices.
  3. Pulse just enough to mix most of the other ingredients, while keeping the salmon rough. You do not want a paste.
  4. You'll probably need to scoop the salmon mixture into a bowl and finish mixing to incorporate everything. You want to have a good, rough texture, so it's better to mix the rest by hand. If the mixture seems too wet and sloppy, add some more bread crumbs and almond flour until the mixture holds together well (be careful, as too much crumbs/flour, and it will crumble).
  5. Form two patties, and lightly oil them on each side.
  6. Grill or pan-fry them until they're nicely browned and cooked through, but not dry, usually 4 minutes per side.
  7. Serve those great salmon burgers with your favorite fixings and a side of oven-baked sweet potato fries!

Notes

To make this Paleo or gluten-free, sub ground flaxseed for the bread crumbs.
