Happy Hump Day! After last night, I am ready for a new day and hopeful that tonight’s bedtime will be better!

Since it is Wednesday, it is time for another edition of What I Ate Wednesday, thanks to the lovely Jenn at Peas and Crayons for hosting!

Since I’m up bright and early this morning and haven’t eaten anything, here are my eats from yesterday:

Breakfast: Paleo Almond Blueberry Pancakes and my morning cup of coffee with a teaspoon of half and half (which I forgot to take a picture of).

I forgot how good these are!

These are SO good and still my favorite Paleo pancake recipe!

Lunch: A variety of things: one turkey roll filled with spinach, tomato and avocado with carrots and some additional spinach topped with a hard boiled egg, tomato, leftover avocado and my husband’s special ketchup.

Snack: Half of a Kid-Friendly Paleo Nutty Banana Bread Muffin with a teaspoon of almond butter. As always, I forgot to take a picture of my snack, but at least you can see how the muffins turned out! To make the muffins, I followed the same recipe for the bread, but I baked them for half of the time, about 25 minutes.

Dinner: Since my husband was traveling, I made myself an “everything but the kitchen sink” salad loaded with sugar snap peas, carrots, artichoke hearts, tomato, avocado,  pepperoncinis and walnuts.
