Happy Hump Day! After a busy day of getting things done for our new house yesterday, it is nice to be home and have somewhat of a relaxing day today (though, we had to rush out early this morning for Keenan’s swim class ). I never realized how overwhelming it can be to pick out doors, hardware, flooring and counter tops!
While I was running around and picking things out for the house, Keenan had fun with my mom yesterday, and look what they picked! I’m SO excited for the cherries to finally be ripe! I am anxious to make some protein ice cream or possibly another Paleo quick bread with them soon…
Anyhow, since it’s Wednesday it is time for another round of What I Ate Wednesday, thanks to the lovely Jenn for always hosting! Also, I’ve finally updated two of my favorite “non-lettuce” salad recipes that were on my old blog, so I can’t wait to share them with you!
Breakfast: No Oat Oatmeal with spinach, cherries and strawberries. I also had my morning coffee, which I forgot to take a picture of.
Lunch: A large apple and walnut salad with chicken
Dinner (From Monday night, since my husband was traveling for work yesterday): Roasted Beet Salad with Goat Cheese
Also, here is the recipe for my Grilled Corn Fiesta Salad that I finally updated! This is one our favorite dishes to make when the weather is warm.

I LOVE roasted beets and goat cheese! Tossed with some arugula and candied pecans or walnuts… yum! I think I might have to make a trip to the store for some beets this week! The other salads sound delicious too!

Your eats look so good!! The lunch salad looks really tasty… I used to make one similar to that & used to love to do a salad with watermelon, walnuts & feta cheese. So good!
Thank you. Ooh, I love watermelon salads with walnuts and feta cheese! I made one last Summer and it was SO delicious! I’ll definitely be making that once watermelon is in season!
Love the look of those salads…I love salads in general!! I have made a beet and goat cheese salad before…yum! And another beet fav is with red onion and capers, drizzled with balsamic and olive oil. Now I am getting hungry!!
Thank you! Salads are truly one of the best meals, as you can put whatever you want in it, add some dressing and voila, it is ready to go! I can pretty much eat a salad for every meal, everyday and be happy (well, maybe not breakfast!).
Will the no oats oatmeal work if I keep my spinach frozen? I just haven’t had much success thawing my spinach and I use it frozen for my smoothies.

I had my smoothies and also some spaghetti for dinner. I’ve successfully cut out dairy and caffeine from my diet and wheat is the next to go. So I had some last taste of wheat bread, bread. 🙂
I haven’t tried the No Oat Oatmeal with frozen spinach, but I don’t see why it wouldn’t work. I would be sure to cook/heat it in the pan first and then add the egg mixture. If you try it, let me know how it turns out!
Great job on sticking with no dairy and caffeine! I couldn’t do it because I love coffee and feta cheese too much!
