Today I’m filling in for Melissa while she’s enjoying a nice family vacation with her lovely family & little baby bump. I truly felt honored & blessed when Melissa asked me to write a guest post. Melissa isn’t just a beautiful woman, she’s a complete super mom to her little cutie pie, Keenan and a devoted wife to her husband. I can only hope that I’m half the mom and wife that Melissa is to her family.

For today’s post, I want to share a quick and healthy recipe that you can make for any meal of the day.

Simple Quinoa Salad

Ingredients:

  • ¼ cup dry quinoa
  • ½ cup water
  • 2 tbsp. hummus
  • Tomatoes, diced
  • Cucumbers, diced
  • Bell Peppers, diced
  • Baby Broccoli florets
  • Greens of your choicecollage1

Preparation:

  • Cook quinoa and water over medium-high heat until all water is absorbed (7-8 minutes)
  • While quinoa is cooking, chop up all vegetables
  • Mix vegetables, cooked quinoa, lettuce hummus in a small bowl
