Anyhow, I can’t believe there is only nine days left until Christmas! It seems like this entire month has just flown by. After finishing up some last bit of shopping and cooking up a storm this weekend (making our edible gifts), I’m pretty much ready for Christmas.

I love weekends spent in the kitchen cooking and baking, especially this time of year, because I just crank up the Christmas music and get to work. Aside from seeing a wonderful hand bell concert with my in-laws on Friday night and going to holiday dinner where Keenan got to see Santa on Saturday, we decided to stay home all weekend, which was MARVELOUS!

Saturday, I made a HUGE pot of pasta sauce,

which my husband canned for me (the batch made about 2 dozen of these size cans!).

While I was making my sauce, he made his homemade pasta, cavatelli,

as well as his traditional fettuccine noodles.

I also baked 3 dozen gingerbread cookies for Keenan’s preschool class, which they decorated and read the story today.

On Sunday, I did some food prep for the week: grilled some chicken which I chopped up and froze in a bag for quick meals, washed lettuce and spinach and made more Mini Frittatas.

Since I have been craving an apple pie, I finally made one yesterday, which we enjoyed for dessert last night. It was SO good and of course, I forgot to take a picture!
