I just love peach season because I can eat peaches all day, everyday. They are my favorite fruit and when I was pregnant with Keenan, I ate at least three a day! I love adding them to salads, making cobbler, grilling them for dessert with a drizzle of balsamic vinegar or just eating them plain. I can never get enough peaches, so when peach season is here, we go through a ton (thankfully my family’s farm grows them!).

Quick and Easy Peach Cobbler Made With Oat Flour

After making a cobbler out of the peaches that we picked a couple of weeks ago, my husband asked if I could make another one, because he enjoyed it so much. So, last Thursday he brought home a huge bag of peaches, plenty for a cobbler, eating fresh and freezing for pies or smoothies later.

Since we had a nice lazy day yesterday, I decided to bake another cobbler for my lovely husband (but really because I wanted more, too!) that is super quick and very easy that I thought I would share. I love using oat flour because it is so nutritious and bakes really well, which is why we tend to eat our cobbler for breakfast instead of dessert (almond butter drizzled on top of warm peach cobbler in the morning is the best!). If you don’t have any oat flour, you can easily make your own, which is what I do. I buy a big container of regular oats and grind them up in my food processor until they are very fine, resembling the same texture of white flour. It works very well and is so inexpensive! I use the oat flour for pretty much everything (pancakes, waffles, cookies, muffins, cobbler, etc).

So, here is this super duper Quick and Easy Peach Cobbler recipe that can be made with any fruit if you don’t have access to fresh peaches, very similar to my grain-free version, that will please any crowd for dessert (or breakfast!)…

Quick and Easy Peach Cobbler Made With Oat Flour

Prep Time: 20 minutes

Cook Time: 38 minutes

Total Time: 58 minutes

Yield: 10-12 servings

Quick and Easy Peach Cobbler Made With Oat Flour

Ingredients

  • 1 cube unsalted butter
  • 1 3/4 cups sugar
  • 2 cups oat flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 cup milk (any kind of milk will work)
  • 6 cups peaches (peeled and sliced)

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix all ingredients except for peaches and 1/4 cup of sugar to form the batter.
  3. Pour batter into a greased 9 X 13 baking dish.
  4. Place prepared peaches into a large microwave-safe bowl and mix in 1/4 cup of sugar. Microwave on high for 5-7 minutes, until you see a good amount of juice at the bottom.
  5. Pour microwaved peaches with all of the juice on top of the batter and bake for 35-40 minutes, until slightly brown and starting to bubble. Enjoy warm with a dollop of fresh whipped cream or vanilla ice cream for dessert or a drizzle of almond butter for breakfast!

Notes

If you don't have peaches, fresh berries or another stone fruit will work just as well.

If you follow a sugar-free lifestyle, xylitol, raw honey or coconut sugar can be substituted for regular sugar.
