One of the things that gets me up on these chilly, winter mornings (at 5:00 a.m) and motivated to workout is looking forward to a nice warm breakfast and a hot cup of coffee when I’m done. I think about what I want to eat for breakfast before I workout, so it pushes me to work harder and faster in order to enjoy it (silly, I know, but it’s what works for me!). I love breakfast, in fact it’s probably my favorite meal of the day because I can enjoy something sweet without feeling guilty!
For this week’s What I Ate Wednesday, I’m sharing my favorite post-workout breakfasts (really, my favorite breakfasts all the time!) because they are packed with nutrition, including lots of protein and some whole grain carbs to help my muscles recover and refuel my body.

I just made an apple cinnamon scramble the other day and had forgotten how much I loved it! So good, filing and protein packed! I tend to add in a good amount of carbs post workout since I don’t eat them often. So lots of sweet potatoes and plantains!
I always forget about plantains, probably because our local grocery store doesn’t carry them all year. I’ll have to pick some up the next time I’m at a larger grocery store. They are always so good!
I know what I’m having for breakfast in the morning…. your paleo apple cinnamon no oatmeal. It’s a good reason or me to eat some flaxseed that I’ve been missing out on for a good while now.

Those oatmeal recipes all look AWESOME. I too wake up at 5 to get to the gym for a 5:30 workout…and the whole time, I’m looking forward to coffee. My first breakfast (my favorite) is a protein shake (even in the winter…I wait to dry my hair after I drink it because I’m so cold). I throw frozen bananas, a few ice cubes, a scoop of vanilla protein powder, a few spoons full of stevia, and strong-brewed cold coffee into my Nutribullet. It’s amazing. That’s my first breakfast after my workout. My later breakfast when I get to work is all-season, but I’ve added cinnamon to make it festive. It’s simple. Just cold overnight oatmeal—1/2 cup of quick oats, a scoop of vanilla protein, stevia, cinnamon (or pumpkin pie spice), and almond milk, topped with plain Greek yogurt. I only measure the oats and powder. I add everything else to taste/consistency.
Thank you! It’s nice to know that I’m not the only one who gets up at a crazy hour to workout! I love your protein smoothie; it sounds delicious! I just made a batch of overnight oats for tomorrow! Unless I’m eating my overnight oats in the Summer, I usually warm them up in the microwave for a minute or two, and top them with some almond butter and berries.
