As a mom, I’m always looking for something fast, easy and healthy to make for dinner which is why I have fallen back in love with my crock pot. It’s funny, we received our crock pot for a wedding gift almost 10 years ago and I really didn’t start using it until the last few years. Since having kids it has become one of my favorite kitchen items because you can truly throw anything in it (frozen or not) and let it cook until dinner time. I love that I can put dinner together in the morning or right after the kids go down for an afternoon nap and I don’t have to think about it until the evening. Why wouldn’t anyone NOT use their crock pot? It’s the best kitchen gadget ever!
So, for today’s What I Ate Wednesday, I’m sharing my six favorite crock pot/slow-cooker recipes. They are all super easy to make and most recipes call for frozen meat!

I actually have one of our favorites in the crockpot right now. Chicken thighs with carrots, parsnips, mushrooms, chicken broth, garlic and a little bit of coconut oil. So good!

I’m a huge crockpot user!! Yesterday I just threw a pork tenderloin in with some salt and pepper and a tiny bit of water since I needed cooked pork for my dinner recipe. At dinner time I just shredded the meat and added it to my salad!!
