I hope you all had a wonderful weekend!
Before I go into the weekend, today is marvelous because my Crustless Broccoli Cheddar Quiche is featured on Everyday Health!! You can check it out here!
Anyhow, I can’t believe there is only nine days left until Christmas! It seems like this entire month has just flown by. After finishing up some last bit of shopping and cooking up a storm this weekend (making our edible gifts), I’m pretty much ready for Christmas.
I love weekends spent in the kitchen cooking and baking, especially this time of year, because I just crank up the Christmas music and get to work. Aside from seeing a wonderful hand bell concert with my in-laws on Friday night and going to holiday dinner where Keenan got to see Santa on Saturday, we decided to stay home all weekend, which was MARVELOUS!
Saturday, I made a HUGE pot of pasta sauce,
which my husband canned for me (the batch made about 2 dozen of these size cans!).
While I was making my sauce, he made his homemade pasta, cavatelli,
as well as his traditional fettuccine noodles.
I also baked 3 dozen gingerbread cookies for Keenan’s preschool class, which they decorated and read the story today.
On Sunday, I did some food prep for the week: grilled some chicken which I chopped up and froze in a bag for quick meals, washed lettuce and spinach and made more Mini Frittatas.
Since I have been craving an apple pie, I finally made one yesterday, which we enjoyed for dessert last night. It was SO good and of course, I forgot to take a picture!
Thanks, Katie, for hosting another Marvelous In Monday!
That’s it for now. It’s time to fit in a quick workout and some stretching for the sciatica on my right hip that doesn’t want to go away and start packaging our edible gifts. Have a great day!
Questions:
What was marvelous about your weekend?
Do you make any edible gifts for the holidays?
Wow, you had a busy weekend of cooking. Everything looks wonderful. I love homemade pasta sauce; it is so nice to have it on reserve for a quick dinner. 🙂
Thanks! Homemade pasta sauce is a huge staple in our house, especially for quick dinners like you said!
Wow – congrats on the recipe in Everyday Health!!!
Looks like you are going to eat well this week! So cool that your husband makes pasta!!
Thank you!! It’s funny, we are going to give most of the pasta away, since we don’t eat that much!
Wow looks like a productive and delicious weekend!
Yes, it felt so good to get so much cooking done!
Can I come over?? All of that looked so amazing!
Sure! 🙂
Homemade pasta…what?!?!? I think I would die and go to heaven if someone made me homemade pasta
I know, I have to say it’s truly the best! It’s funny, we make all of this pasta, but we end of giving most of it away as gifts, because we don’t tend to eat that much pasta!
I love productive cooking weekends!! You guys were seriously busy! That sauce looks fantastic. I need to make a big batch again to freeze or can.
Thank you! It felt so good to get so much done!
