I never thought I would love Mondays, but today is a marvelous one because I finally have my husband back (and my kids have their Daddy back) since we finished up walnut harvest late Saturday night!! Today will be the first day in over two months that my husband will be home for lunch and dinner! Keenan put it all into perspective yesterday morning when he said, “I like having Daddy home!”

Making a double batch of this family-friendly, one-pot meal, Zucchini Pizza Casserole yesterday (one for dinner and one to freeze for later). I have been on a casserole kick lately since the weather is cooler and as an added bonus, they make dinner time so much easier!

I’ve always been a casserole fan – especially when the boys were little. I could prep dinner early and then just put it in the oven and add salad and some veggies at dinner time.
Yes, casseroles are the best! I love just adding a salad or a veggie and dinner is done!
Yay for harvest season being over! I’m sure that is not a fun time when you’re hubby is gone all the time… Love the costume! Ayden is just now learning what storm troopers are through his older cousin and very intrigued by them. I think next year he’ll be more into the super heroes etc. as he’s just starting to get into them. Guess I better get ready!
