If you follow my blog, you know I eat A LOT of No Oat Oatmeal these days. It is my go-to breakfast because it is so filling and satisfying, keeping me fueled for hours. I was craving apples with cinnamon the other day, so I decided to incorporate them into my usual recipe (tweaking a few things) and boy, did it turn out well! It was exactly what I was craving, like a mini apple pie in a bowl, but much healthier!

Paleo Apple Cinnamon No Oat Oatmeal (also gluten-free!)

Prep Time: 5 minutes

Cook Time: 7 minutes

Total Time: 12 minutes

Yield: 1 good size bowl

Paleo Apple Cinnamon No Oat Oatmeal (also gluten-free!)

Ingredients

  • 1 apple (diced)
  • 3/4 cup egg whites
  • 1 Tbsp applesauce
  • 1 tsp coconut oil
  • 2 Tbsp milk of your choice
  • 1 Tbsp flaxseed (ground)
  • 1 Tbsp chia seeds
  • 1 tsp cinnamon
  • 1-2 tsp raw honey (to taste)

Instructions

  1. Heat a small pot over medium heat and add coconut oil and apples. Saute apples until slightly brown and softened.
  2. Meanwhile whisk the rest of the ingredients in a bowl and pour into pot. Continue to stir until the consistency resembles "oatmeal."
  3. Serve immediately with a dollop of almond butter on top and a drizzle of raw honey!
