This is such an easy and “dessert-like” breakfast that your family will be sure to love! My mouth was watering when I saw Kristen’s recipe at Stuft Mama. I wish I could take credit for it, but I adapted her recipe to make it Paleo-friendly. Enjoy!
Paleo Apple Cinnamon Pancake
Ingredients
- 1/4 cup melted coconut oil
- 1/2 cup unsweetened vanilla almond milk
- 3 eggs
- 1/2 cup almond flour
- 2 Tbsp flaxseed
- 1/2 tsp vanilla
- 1/4 tsp cinnamon
- 1 Tbsp raw honey
- 1 Tbsp Xylitol
- pinch of salt
- 3 small apples, or 1 large one (cut in small pieces)
- 1/4 cup walnuts (chopped)
Instructions
- Preheat oven to 400 degrees.
- Melt coconut oil in microwave for 35-45 seconds (until it is completely liquid).
- Place oil into 8X8 glass dish.
- Mix the rest of the ingredients in a large bowl and pour into glass dish.
- Bake for 20-30 minutes, until golden brown or until a toothpick inserted in the middle comes out clean. Enjoy with your favorite topping, or eat it as is!
