This is such an easy and “dessert-like” breakfast that your family will be sure to love! My mouth was watering when I saw Kristen’s recipe at Stuft Mama. I wish I could take credit for it, but I adapted her recipe to make it Paleo-friendly. Enjoy!

Paleo Apple Cinnamon Pancake

Cook Time: 30 minutes

Paleo Apple Cinnamon Pancake

Ingredients

  • 1/4 cup melted coconut oil
  • 1/2 cup unsweetened vanilla almond milk
  • 3 eggs
  • 1/2 cup almond flour
  • 2 Tbsp flaxseed
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1 Tbsp raw honey
  • 1 Tbsp Xylitol
  • pinch of salt
  • 3 small apples, or 1 large one (cut in small pieces)
  • 1/4 cup walnuts (chopped)

Instructions

  1. Preheat oven to 400 degrees.
  2. Melt coconut oil in microwave for 35-45 seconds (until it is completely liquid).
  3. Place oil into 8X8 glass dish.
  4. Mix the rest of the ingredients in a large bowl and pour into glass dish.
  5. Bake for 20-30 minutes, until golden brown or until a toothpick inserted in the middle comes out clean. Enjoy with your favorite topping, or eat it as is!
