I am SO excited to share this recipe, because they are the first coconut flour pancakes that I have had that didn’t crumble! But, I can’t take credit for them, I adapted my recipe from Heather at Kiss My Broccoli. She has a great blog with lots of tasty recipes, so check her out!
Paleo Coconut Banana Blueberry Pancakes
Ingredients
- 12 egg whites
- 1 1/2 large ripe bananas (mased)
- 1 cup unsweetened almond milk
- 3/4 tsp vanilla
- 3/4 cup coconut flour
- 1/4 cup dried blueberries
- 1 Tbsp flaxseed
- 1/2 tsp cinnamon
- 1 tsp coconut oil for greasing your griddle
Instructions
- Preheat a non-stick skillet or griddle to medium heat and coat with coconut oil.
- Whisk egg whites until frothy.
- Add remaining ingredients, (except for blueberries) and stir well.
- Fold in blueberries.
- Using an ice cream scoop, pour batter onto skillet surface, forming 1-2 medium size pancakes (however many you can fit).
- Cook 5 minutes per side.
- Once cooked, divide among three plates and top with honey, maple syrup, coconut butter or other favorite topping. Enjoy!
