For a quick and delicious one-pot meal (that is also Paleo friendly), try this recipe! My husband loved this (probably because of the bacon), but Keenan especially enjoyed this as he ate his by the spoonfuls and kept asking for more!
Paleo One-Pot Meal: Green Beans with Bacon
Ingredients
- Green beans (1 1/2 lbs)
- Mushrooms (1/4 lb)
- 1 yellow onion
- 6 slices of bacon
- 1/4 cup Slivered Almonds
- 1 clove of garlic (minced)
- 1 Tbsp olive oil
- -Splash of unfiltered apple cider vinegar
- 1 Tbsp Italian seasoning
- 1 1/2 tsp garlic no-salt seasoning
- Pinch of salt and pepper to taste
Instructions
- Steam or parboil beans first. (10 min. in microwave).
- Cook bacon, then add onion, garlic and mushrooms and spices.Cook until tender.
- Add beans and mix well.
- Let cook for another 5 minutes for flavors to come together and add a splash of vinegar.
- Divide among 2-3 plates and top with slivered almonds. Enjoy!
Notes
If you don't want to use bacon, you can use chicken or Pancetta instead.
