I hope everyone had a great weekend and St. Patty’s Day! As always, another fun weekend went by WAY too fast over here!

On Friday night, my husband and I tried a new recipe creation of cabbage rolls made Asian style with shrimp (recipe to come soon!), after Keenan went to bed. On Saturday, a couple of my girlfriends and I enjoyed a fun afternoon of shopping, while our significant others’ babysat the kiddos. When we got home, dinner, drinks and dessert (my lemon meringue pie turned out so good!) were waiting for us; it was the perfect day and MUCH NEEDED (especially since I’m going to be a single parent for most of this week, due to my husband traveling for work)! Last night, we enjoyed an “at home date night” with some more yummy eats that my husband threw together (a “breakfast for dinner”  hash with cabbage, potatoes (for St. Patty’s Day!), sausage, bell peppers, onions and an egg on top) with a nice bottle of wine!

Now, time for Rocky Mountain Popcorn!

As some of your know, I LOVE popcorn! It is one of my favorite snacks, especially freshly popped Kettle Corn from a farmer’s market or fair. It is definitely one my “food weaknesses or triggers,” because I can eat Kettle Corn like nobody’s business! Even Keenan has adopted my love for popcorn because anytime he sees popcorn, he insists on having some. On top of that, he eats his popcorn by the fistful, cramming it into his mouth!

Anyhow, Rocky Mountain generously sent me a box of samples to try about a month ago. I was so excited to try some, that I immediately opened it and found a wonderful array of flavors: Kettle Corn, White Cheddar, Caramel, Butter, Cinnamon Sugar, Naked and Jalapeno (which my husband was excited to try!).

Each flavor was very good and not too salty, like some other brands. My favorite flavor was actually Cinnamon Sugar, as the Kettle Corn was a little too sweet for my liking. My husband’s favorite was the Jalapeno, and Keenan loved every flavor, but he especially enjoyed the Caramel!

One of the things I like most about Rocky Mountain is their simplicity of ingredients. Each flavor contains very few ingredients of popcorn, canola oil, salt, and whatever flavorings for the type of popcorn. All of their popcorn is air-popped and packed fresh. By using minimal ingredients and air-popping, the calorie content for each flavor is relatively low, averaging about 150 calories or less for half of a bag, making for a pretty healthy snack or after dinner treat. Note, popcorn is a great healthy snack when you are looking for something to munch on without a huge calorie load, but it doesn’t really provide any macronutrients of protein or fiber to fuel your workout or keep you satisfied for a long period of time. With that being said, I love popcorn for an after dinner snack while watching TV or a movie, but I don’t eat it in the afternoons prior to my workouts. I reviewed the popcorn based on it being a fun, healthy “non-performance” snack.

All, in all, I love Rocky Mountain Popcorn and I will definitely be eating it again! Since they were so generous, they offered to send one lucky reader a small NottaTin of samples, featuring all seven of their flavors!
