Happy hump day!
We are enjoying the newest additions to our family that we got to take home yesterday: Lulu, a 10 week old Rodhesian Ridgeback and boxer mix and O’Malley, a 4 month old kitten! We are all in love (though maybe a tad bit in over our heads!).
Speaking of love, I’m excited to share one of my all-time favorite salads, Santa Fe Chicken Salad,
with some of the best tortilla chips around…RW Garcia Mixt Bag Tortilla Chips that I received from Kid Kritics. This is not just my pregnancy cravings talking, these chips are crazy good and so addicting! My husband and Keenan love them (of course, since there are finally chips in the house), but seriously, their flavor is great, they are not too thin and perfectly crunchy. The best (and most important) part of all is that they are made with very few ingredients that are all wholesome (no added preservatives or chemicals), which is what I like to see if I am going to buy a processed food, let alone chips.
Kid Kritics is an organization that strives to identify healthier foods that your family deserves and your kids will love. They have a group of thousands of kids (boys and girls and of various ethnic backgrounds) from the ages of five to fourteen that try hundreds of products in order to give their approval. At a minimum, seventy percent of the kids have to say a product tastes good for it to receive the Kid Kritics approval seal. Their goal is to have the seal printed on food packaging and/or marketing of the approved foods. All of the approved food and beverages must contain zero trans fats, no artificial additives, no corn syrup, little to no caffeine, no chemicals, low amounts of natural sugar, as well as natural-sourced sodium, no nutrients stripped or bleached and all products need to be natural (or contain natural ingredients, i.e. grow in the ground, walks on earth, swims in the water, etc).
Before we go into the salad, I had to make a batch of guacamole to go with the chips. It was so good, I should have made more!
Now, onto the salad…
Ingredients
- Salad:
- 1 head of washed and torn romaine lettuce (or any kind of your choice)
- 1 avocado (chopped)
- 1 tomato (chopped)
- 1 small can of no sodium sweet corn
- 1 can of low or no sodium black beans
- 6-8 oz. cooked chicken (chopped)
- 1/2 cup shredded cheddar cheese
- 1/2 cup crushed RW Garcia Mixt Bag Sweet and Spicy Salsa Tortilla chips (or any kind)
- Dressing:
- 1/4 cup salsa
- 1 Tbsp avocado or olive oil
- 2 Tbsp white wine vinegar
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- pinch of salt and pepper
Instructions
- Add lettuce to a large bowl.
- Pour the rest of the salad ingredients on top of lettuce (except for cheese)
- Meanwhile mix dressing ingredients together.
- Pour dressing on top of salad and toss until well combined. Sprinkle cheese on top as a garnish. Enjoy!
Notes
For some added flavor and zip, add fresh cilantro and a splash of lime juice to the dressing!

Wow, what a great organization! I love hearing about groups/companies that are passionate about bringing good, clean food to consumers. I haven’t tried the chips but I think I’ve seen them at Whole Foods.

It is a tremendous organization and I hope more people become aware of the and what they are trying to do.
We are definitely way in over our heads, but Lulu and O’Malley are both very sweet and loving. Keenan loves them and after not having animals for a long time, it is nice to finally have some pets again!
