Today I’m filling in for Melissa while she’s enjoying a nice family vacation with her lovely family & little baby bump. I truly felt honored & blessed when Melissa asked me to write a guest post. Melissa isn’t just a beautiful woman, she’s a complete super mom to her little cutie pie, Keenan and a devoted wife to her husband. I can only hope that I’m half the mom and wife that Melissa is to her family.
For today’s post, I want to share a quick and healthy recipe that you can make for any meal of the day.
Simple Quinoa Salad
Ingredients:
- ¼ cup dry quinoa
- ½ cup water
- 2 tbsp. hummus
- Tomatoes, diced
- Cucumbers, diced
- Bell Peppers, diced
- Baby Broccoli florets
- Greens of your choice
Preparation:
- Cook quinoa and water over medium-high heat until all water is absorbed (7-8 minutes)
- While quinoa is cooking, chop up all vegetables
- Mix vegetables, cooked quinoa, lettuce hummus in a small bowl
- Enjoy!
