After seeing Michelle’s Morel Mushroom and Asparagus Spaghetti Squash Bake, I was inspired to experiment a little and come up with my own casserole, especially since I needed to use up our asparagus and cherry tomatoes. It turned out really well, and both Keenan and my husband loved it! It will definitely be one of our “regulars” while asparagus is in season.

Asparagus and Spaghetti Squash

After scooping out the spaghetti squash flesh and chopping the veggies, I just mixed everything together in a large bowl.

Cook Time: 1 hour, 30 minutes

Spaghetti Squash Asparagus Cheesy Casserole

Ingredients

  • 2 small or 1 large spaghetti squash (cooked)
  • 1 lb. ground turkey (cooked) or 4-5 Italian pre-cooked sausages (diced)
  • 2 bunches of asparagus (sliced into small pieces)
  • 1 1/2 cups cherry tomatoes (sliced)
  • 1/2 red onion (diced)
  • 3 cloves of garlic (minced)
  • 3 eggs (beaten)
  • 1 cup of crumbled feta cheese
  • 1/2 cup + 2 Tbsp Parmesan cheese (grated)
  • 1 Tbsp bread crumbs
  • 1 Tbsp almond flour
  • 1 Tbsp Italian seasoning
  • 1 Tbsp garlic no-salt seasoning
  • 2 Tbsp Italian seasoning
  • black pepper to taste

Instructions

  1. Preheat oven to 350 degrees and grease a 9X13 glass baking dish with 1 tsp of olive oil (or use olive oil spray).
  2. Scrape out spaghetti squash flesh using a fork into a large bowel.
  3. Add the veggies, eggs, spices, feta cheese and 1/2 cup Parmesan. Mix well.
  4. Pour mixture into baking dish.
  5. Mix the topping: 2 Tbsp Parmesan cheese, bread crumbs and almond flour in a small bowl.
  6. Sprinkle topping on mixture and top with a sheet of foil.
  7. Bake covered for 1 hour at 350 degrees. After an hour, increase heat to 375 and remove foil. Bake uncovered for an additional 30 minutes, or until browned.
  8. Serve immediately and top with pasta sauce!

Notes

An easy way to cook spaghetti squash is to cut it in half, scoop out the seeds and add water (just enough, so it doesn't overflow). Put both halves together and microwave on high between 10-12 minutes (depending on how big the squash is), or until softened. Let cool and then scoop out the flesh.
