Happy Monday! I hope you all had a nice weekend staying warm!
We had a marvelous weekend with friends and going to a holiday festival with my mom yesterday where Keenan got to visit Santa. He was so excited to sit on his lap and tell him his wishlist!
Anyhow, for today’s post I’m anxious to share this marvelous new Spaghetti Squash Pasta Bake recipe for Marvelous In Monday!
Instead of making my usual spaghetti squash tomato bake with ground turkey last week, I decided to change things up a bit which my husband and Keenan liked even better (so much that I’m making it again this week!). This recipe is super simple and quick because you just mix everything together and bake it!
Ingredients
- 1 large spaghetti squash
- 2 cups mozzarella cheese (shredded)
- 5 Italian sausages (cooked and diced)
- 2 cups pasta sauce
- 3 tsp Italian seasoning
- 1/2 tsp garlic salt
- 1 tsp pepper
- 1/2 cup Parmesan Cheese
- 1/2 cup bread crumbs
Instructions
- Preheat oven to 350 degrees and grease a casserole dish with olive oil.
- Cut spaghetti squash in half, remove seeds and fill one cavity with water. Replace other half on top and place in a large microwave safe dish. Microwave on high for 10 minutes.
- Once spaghetti squash is cooked, pour water out and take a fork to remove the "spaghetti noodles" (flesh) and place in a large bowl.
- Add sausages, cheese, pasta sauce, spices and mix well.
- Pour mixture into prepared casserole dish.
- Mix bread crumbs and Parmesan cheese together and sprinkle on top of spaghetti squash.
- Bake for 30-40 minutes, until bubbly and slightly brown on top.

Oh yum! I usually make my spaghetti squash mixed with a little smart balance, fresh garlic, and Parmesan cheese. This looks fabulous though I’ll definitely be making this soon!
Ooh, eating it with a little butter, garlic and Parmesan cheese sounds good, too! I’ll have to try that way!
