I can’t believe it is already Monday, again. It seems that our weekends go by way too fast these days. I am just not ready to the start the week quite yet, which I think is due to not feeling too well. For some reason, I woke up  this morning feeling  nauseated and not having an appetite, which has continued throughout the day. I’m super tired too, even though I went to bed at a decent hour last night. Ugh…I hope I am not getting the horrible bug that is going around!

On a more positive note, to kick off our weekend, my husband and I enjoyed a nice dinner on Friday night after Keenan went to bed. We made our usual Chicken Fajitas with a Mexican slaw, but with Coconut Flour Tortillas. The tortillas turned out SO well and here is the recipe!

Now, onto the rest of our weekend…my husband and I had such a wonderful time in Auburn! Keenan stayed with my in-laws on Saturday night, and he had a great time with them. In fact, when we picked him up yesterday, he did not want to leave! He kept saying, “Not going home!” It also didn’t help that he was super-tired, too. My in-laws took him on a walk to the river yesterday morning, a couple of miles from their house, and Keenan insisted on walking the entire way. He didn’t want to ride in the backpack or be carried! What would have been an hour walk at most (since they stopped and looked at things along the way, took 3 hours!). Needless to say, he was exhausted, but in a good way!

Auburn is a cute little town, only 40 minutes east of Sacramento! When my husband and I arrived in Auburn, we walked around and explored the town, since our room at the Power’s Mansion Inn wasn’t ready. We found a little coffee shop called Depoe Bay Coffee and each got a coffee to warm us up (since it was SO cold) and provide a little pick-me-up. It was nice because they had so many options of milk: coconut, almond, rice, hemp, soy and regular milk. I enjoyed an Americano with almond milk!

Before dinner, we enjoyed a beer at the Power Club Restaurant and Bar, owned by the Power’s Mansion Inn. When we checked into our room, my husband and the owner hit it off quite well, so he offered to have us come to his bar for a free beer. The owner brews all of the beer himself and I have to say, it was pretty good! I loved the brown nut ale and my husband liked the stout the best. (I know what you are thinking, beer isn’t Paleo! We decided to just splurge for our night out, getting back on it the next day).

We had dinner at the WONDERFUL Carpe Vino. It is a wine retailer, bar, and restaurant that serves delicious food and huge array of wines from around the world. We started off our night with black truffle butter popcorn with a nice bottle of wine from Argentina. Since they had so many wonderful appetizers to choose from, we decided to just order a bunch of appetizers for our dinner. We enjoyed: seared Hawaiian ahi tuna with a green papaya salad, crispy shallots, peanut, and coconut emulsion; seared dayboat scallops with a cauliflower puree, satsuma mandarins, and caper brown butter; roasted baby beets with goat cheese panna cotta, winter citrus, and castelvetrano olive oil; and–last but not least–short rib poutine! That’s a heavenly combination of french fries, cheese curds, and red wine gravy. Everything was amazing! In addition to the food being phenomenal , the service was excellent, and the ambiance was very nice, a perfect setting for a romantic dinner. My husband and I can’t wait to go back again, if we are ever in the area!

After dinner, we headed to The Little Belgium Deli and Beer Bar, that my husband insisted on. Since he is a beer connoisseur, we had to check out their beers. We added to our indulgence of “non Paleo foods and bevrages” by each ordering a beer. I had one of the best beer concoctions I have ever tasted: Young’s chocolate stout mixed with a rasberry lambic…HOLY YUM! It was not overly sweet and the perfect amount of tartness! I am definitely making this at home (after our Paleo Challenge, of course!).

Yesterday, before we headed home, we had a nice breakfast at Frontside Cafe, a little ways outside of downtown Auburn. We had heard that they were the best breakfast spot in town, so we had to try it. From the wonderful aroma coming fro the kitchen and the amount of choices on their menu, we new we were in the right place. My husband had the carne asada scramble with their Asian slaw on the side and I enjoyed their artichoke chicken scramble with their red and green pesto. Both dishes were delicious!  They were the perfect amount, too (not too little, but not too much where you felt stuffed).

It was a marvelous weekend that I wished could have continued another day. It was nice for my husband and I to have some time together, away from our usual surroundings and not acting in our “parent roles.” We had a very good conversation about our future and where we want to take it, thus we are anxious to get the ball rolling and make things happen!

He was so tired from his weekend at Grandpa and Grandma's house that he feel asleep a few minutes after we put him in the car to drive home yesterday!
