It has been a LONG time since I did a typical What I Ate Wednesday post, so I thought it would be good to bring it back today by sharing my eats from yesterday.
Breakfast:
Leftover quinoa scrambled with an egg, spinach and some pesto sausage with a kiwi and my husband’s infamous cappuccino. I was so hungry, that I gobbled it down before I remembered to take a picture, sorry!
Lunch:
Leftover Turkey Taco Pie (recipe coming soon!) topped with salsa and 1/2 of an avocado that tastes even better the next day!
Snack:
My favorite chocolate protein shake these days (the only protein shake I REALLY like because it actually tastes like you are drinking chocolate milk)! I either drink it plain with cold water or milk (like I did yesterday) or mix it with a frozen banana, splash of milk and a dollop of nut butter. It’s SOOO good!
Dinner:
My husband’s favorite pasta dish that I make, Roasted Asparagus Pasta with Feta Cheese.
After dinner, I split a beer with my husband, but I was way too exhausted to take a picture. Have a good one!

It’s funny, my mouth just watered over your banana cream and blueberry overnight oatmeal! I’m going to try that this week!
I WISH my husband’s favorite pasta dish I made had roasted asparagus and feta cheese in it lol. That’d be perfect for me. He’d eat it…but he wouldn’t love it. And SPLITTING a beer…that’s just impossible for him, too. Lol. I love him all the same. And I also love grilling asparagus!! YUM!
Ooh, grilled asparagus is SO good! I have to say that is probably my favorite way to eat it.
I wish my husband loved asparagus! Every time I cook it, he refuses to eat it. So I eat a TON. Which isn’t necessarily a bad thing 🙂 We need some more pics of that adorable baby girl of yours!
Oh, that is too bad! We eat asparagus (when it’s in season) like it’s going out of style in our house. More pictures of Mirella will be coming soon!
Oooh the asparagus pasta looks tasty with feta! And pesto sausage sounds interesting.
It compliments the asparagus so well! A local butcher shop makes all kinds of different sausages and their pesto is by far my favorite!

I love perfectly steamed asparagus – it still has to be a little bit firm and definitely not overcooked and floppy!

Asparagus is one of those things that I have never liked – maybe I need to try it again!
I used to not like it since I grew up eating it steamed, but after grilling and roasting it, I can’t get enough! You should try it again! 🙂
