Thanks for all of the anniversary wishes yesterday! Though we didn’t do much to celebrate, my husband and I enjoyed a simple dinner of burritos from our favorite Mexican restaurant and a piece of carrot cake for dessert, while catching up on some TV shows. It was a nice, relaxing evening; something we both needed!
Here is a picture of the beautiful carrot cake topped with a thick layer of cream cheese frosting that Keenan and I made yesterday. Now, I only wish I didn’t make so much! It is too tempting to have it staring at me every time I open the fridge…
Anyhow, it’s time for another edition of What I Ate Wednesday, thanks to Jenn for hosting! She has some really yummy eats, so be sure to head on over to her blog, too!
Breakfast: Gluten-Free Banana Bars With Cream Cheese Frosting with a nectarine, and my usual cup of joe, but with my husband’s wonderfully sinful homemade whipped cream!
Lunch: Spinach salad with hard boiled eggs, avocado cherry tomatoes, pepperoncinis and a sprinkle of roasted walnuts on top.

Dinner: Tonight, we are having a grilled zucchini salad with charred cherry tomatoes, grilled onions, Italian chicken sausage and feta cheese. It should be good! We recently got a veggie pan for our barbecue, so it has been fun tossing different chopped veggies, even leafy greens, in it and seeing how they turn out.

Oh my those gluten-free banana bars sound wonderful! And I love that you use almond flour as the main flour in the recipe. Now a question… Which I think I already know the answer to, but I’ll check anyways! 🙂 Have you ever tried making the bars with a liquid sweetener like honey? My family is following GAPS right now for health reasons, and while I’d love to make the bars for my parents, granulated sweeteners are out. And… I have a feeling that honey wouldn’t work too well in these. Lol.

Thanks! I’m sure you could use honey for the recipe. I bake my Paleo Chocolate Chip cookies and banana bread with honey and xylitol, and they are great, so I don’t think it would tweak the flavor or change the texture of the banana bars. If you make them using honey, you will have to let me know how they turn out! I’m curious!
