Happy Hump Day! It is pajama day in our household today. It must be the rain, because both Keenan and I have been moving rather slow. He slept in until 8:00 this morning (whoohoo!) and still seemed a little tired, so we just stayed home and played. We had plans of meeting our friends at the library, but Keenan refused to get dressed and just wanted to read books and play at home. As much as I wanted to get out of the house, it was nice to just have a relaxing morning at home.

Also, today is the first day of Keenan wearing his “big boy” underwear, so it is probably good we stayed home. So far, he has been doing great, going pee pee on the potty every hour and letting me know when he has to go most of the time. When I was getting him ready for his nap and about to put a diaper on, he absolutely refused to put one on, so he is napping with his underwear as I write this. I’m a little nervous, as I’m afraid of what kind of accident will be waiting for me when he wakes up, but I guess that is just a part of the process (at least I hope!). So, we’ll see how things go!

Breakfast:

A big bowl of No Oat Oatmeal with sliced strawberries and a Mocha Latte (espresso with a little dark chocolate almond milk and 1% cow’s milk).

Too good to not have for breakfast!

Dinner:

Since my husband is traveling for work this week, I have been enjoying HUGE “everything but the kitchen sink” salads. Tonight, I’m planning on making an apple walnut salad with feta cheese and a champagne vinaigrette; it should be good! Sorry, I’ve been so excited to eat my salads that I forgot to take any pictures.

Oh, before I forget, here is the recipe for my Salmon Bruschetta with Endive Leaves that some of you asked for. I made it last Saturday and it turned out SO good!
