Wow, what a day, but a productive one! I was able to get our house cleaned (despite a couple of meltdowns from Keenan), get all of the laundry done (I’m still working on getting it all folded and put away!), prep dinner, go to CrossFit, sub for tonight’s beginner class and train my personal training client. It was a busy day, but I feel so much better getting everything done, especially coming home to a clean house!
Anyhow, since it is Wednesday, it is time to link up with Jenn at Peas and Crayons for her fun link up, What I Ate Wednesday. Since it is so late and I’m exhausted, I’m going to keep this post short and sweet. However, I’m SUPER excited to share a new Paleo pancake recipe with you! Finally, I found the perfect ratio of creating fluffy, moist and non crumbly Paleo pancakes! They really resemble traditional pancakes. These will be my “go-to” pancakes from now on!
Here are my eats from today:
Breakfast:
– Paleo Almond Blueberry Pancakes
– Mocha Latte with dark chocolate and unsweetened vanilla almond milk
Lunch:
– My spin on a cobb salad with one hard boiled egg, a slice of turkey, tomatoes, avocado and raw pumpkin seeds
Dinner:
– Green beans sauteed with Italian sausage, mushrooms, sun dried tomatoes and onions (I wish I could have sprinkled feta cheese on top!)
Snack (that I just finished eating):
– Apple with a cup of herbal tea

Is it terrible that I struggle with the question “favorite meal of the day”?? I seriously love all my meals. Isn’t that the way it should be?!? I love breakfast, for breakfast. My lunch is always fantastic and make me feel energized for the day. And dinner is where I get to be creative and eat in the comfort of my home, with my husband. I love it all! 🙂
After you say that, I look forward to every meal, too! I love using creativity to come up with different meals ideas.
Yum! They all look delicious! I wish my hubby were more a fan of green beans. I put them into a Paleo Shepard’s Pie I made last night and he picked them all out 🙁 Not setting a great example for Ayden! My favorite night time snack is an apple with herbal tea too! Well, before the Paleo Challenge I would often eat a piece of dark chocolate instead, or as well. Now I just crave apples! Yum!
Ooh, dark chocolate sounds good! Hmmm…I think I might have a piece once our challenge is over! Speaking of, when is your challenge done?
Sounds yummy. My favorite pancake is a heaping scoop of almond butter, a banana, and an egg.
