Happy Hump Day! I went to bed WAY too late last night and Keenan woke up twice again (thankfully, he went right back to sleep, but I’m not sure why he is waking up), so I’m sure feeling it today, as I’ve been dragging since I woke up. When I don’t get enough sleep, my patience immediately decreases with Keenan, so if he isn’t listening to me when I ask him to do something, I always have to take an extra deep breath and make sure to stay calm. I hate feeling like that, so I definitely need to go to bed on time tonight…UGH!
Fortunately, we started the day off with a fun play date of making rhythm instruments out of coffee cans and popcorn kernels at our friend’s house, as part of our MOMs Club. It was good to get out of the house, catch up with other moms and Keenan had fun playing with his favorite buddy!
Anyhow, since it is Wednesday, it is time to link up with Jenn at Peas and Crayons for her fun link up of What I Ate Wednesday.
Here are my eats from today, including a tasty slow-cooker recipe:
Breakfast:
– No Oat Oatmeal with spinach, dried blueberries and of course, topped with almond butter! I also enjoyed my morning coffee with with a little bit of leftover homemade whipped cream (made with Xylitol) that my husband made over the weekend (sorry, I forgot to take a picture of it!).
I had to take a picture of this, it was too cute: Keenan and my husband eating their breakfasts together this morning!
Lunch:
– Leftover Slow-Cooker Savory Butternut Squash Stew with a dollop of garlic chili paste on top.
– Keenan’s lunch: Enjoying his favorite sandwich, a Micky Mouse Special (peanut butter, honey and banana), with carrots!
After Lunch:
– Iced coffee with a tablespoon of milk and a sprinkle of Xylitol to get me through the afternoon!
Dinner:
– Last night: Slow-Cooker Savory Butternut Squash Stew, which was delicious!
– Tonight: We are doing something quick and simple: Slow-Cooker Lemon Garlic Chicken with Paleo Creamy Dreamy Cauliflower (except with cheddar cheese added, so not 100% Paleo!).
That is it for today; it is time to head to CrossFit. Have a great afternoon!

Best thing I’ve eaten this week :: I went to make chickpea salad the other day, but accidently pulsed the peas for too long so it’s more like rice, but it’s still delicious!

Today’s eats were a mess compared to yesterday. Woke up late, inhaled two hard boiled eggs before spin, then ran home, grabbed a Quest Bar and out the door to the dr. and grocery shopping. I was so busy cleaning this afternoon that I didn’t get a chance to eat much. So I’m looking forward to some chicken, veggies and goat cheese for dinner tonight!
Ooh, chicken, veggies and goat cheese sounds good! That reminds me, I need to add goat and feta cheese to our grocery list!
The pic of Keenan and your husband is too cute. My favorite thing that I ate today was my breakfast: protein oatbran with LOTS of blueberries, topped with a big dallop of almond butter. Mmmmm. Perfect breakfast for a super-cold morning. 🙂
Thank you! Your protein oatbran sounds good! I think that is why I love No Oat Oatmeal so much, because it warms me up on these cold mornings we have been having lately, in addition to providing a nice excuse to eat a dollop of almond butter!
So what do you think of xylitol? Im thinking of switching but want to see what people think!
I love it! We only use Xylitol and raw honey in our house. I find that it provides the same amount of sweetness as sugar and it bakes like it, too. I also add it to my coffee and yogurt, and my husband uses it to make his whipped cream. I really can’t go back to using sugar. Of course, during the holidays and for some family gatherings, I will breakdown and bake with sugar, but I prefer not to. When you purchase it, make sure that that the texture is really fine, as some brands don’t grind them up as fine as others. I like the NOW Foods brand. Good luck!
I haven’t tried Almond Butter but it sounds good. I like the sneaky spinach!!! And I love the picture of hubby and the little one eating!
Thanks! Almond butter is my go-to nut butter at the moment. I LOVE peanut butter, but I have to say, I think I actually enjoy almond butter better these days! You will have to give it a try!
