Happy Hump Day! After last night, I am ready for a new day and hopeful that tonight’s bedtime will be better!
Since it is Wednesday, it is time for another edition of What I Ate Wednesday, thanks to the lovely Jenn at Peas and Crayons for hosting!
Since I’m up bright and early this morning and haven’t eaten anything, here are my eats from yesterday:
Breakfast: Paleo Almond Blueberry Pancakes and my morning cup of coffee with a teaspoon of half and half (which I forgot to take a picture of).
Lunch: A variety of things: one turkey roll filled with spinach, tomato and avocado with carrots and some additional spinach topped with a hard boiled egg, tomato, leftover avocado and my husband’s special ketchup.
Snack: Half of a Kid-Friendly Paleo Nutty Banana Bread Muffin with a teaspoon of almond butter. As always, I forgot to take a picture of my snack, but at least you can see how the muffins turned out! To make the muffins, I followed the same recipe for the bread, but I baked them for half of the time, about 25 minutes.
Dinner: Since my husband was traveling, I made myself an “everything but the kitchen sink” salad loaded with sugar snap peas, carrots, artichoke hearts, tomato, avocado, pepperoncinis and walnuts.
Before I go, here is the recipe to my husband’s infamous Grilled Cabbage Salad that we had last Saturday! Enjoy!

– Do you ever have weird cravings? For some reason, I was craving my husband’s ketchup yesterday and it tasted so good on top of my mini spinach salad for lunch…weird!

Ooh, we haven’t had kabocha squash in a while, I might have to add that to our grocery list for next week!

Your pictures are so pretty! As are your eats! I love throwing things in a bowl and calling it a salad – I always feel so healthy and good after eating something like that! 🙂
Thank you! I think that is the beauty of salads, putting whatever you want in it, adding a little dressing and voila, you have a healthy (and tasty) meal ready in minutes! Like you, I love the feeling after eating a nice hearty salad!
Ha! You’ve seen my eats….I ALWAYS have weird cravings! Yesterday I ate raw asparagus dipped in ketchup! Actually, I don’t think that’s weird, but my coworker looked at me all kinds of funny when I told her what I was eating. She was like, “raw asparagus? in ketchup?!” Lol
Haha, raw asparagus dipped in ketchup sounds good! I just might have to try it!
