Happy Hump Day! It’s only Wednesday, but this week has been crazy busy with packing up for our move on Monday. I can’t believe we only have a few more days left until we are in our new house! I’m so excited, but I’m just dreading the move, ugh!
Anyhow, it’s time for another round of What I Ate Wednesday, thanks to the lovely Jenn at Peas and Crayon for hosting!
Instead of just highlighting yesterday or today’s eats, here is what I have been eating the past few days:
Breakfasts…
No Oat Oatmeal with spinach and berries topped with a dollop of almond butter
Green Flax Banana Nut Pancakes with the last of my husband’s homemade whipped cream
A NEW one…Warm Buckwheat Porridge with blueberries (A new favorite!)
Lunches…
BIG salads with turkey or chicken, stone fruit, avocado and roasted walnuts
Dinners…
Bison bacon burgers with grilled sweet potato fries
Massaged Kale Greek Salad
Slow-Cooker Sweet and Spicy Pork with steamed broccoli sprinkled with brewer’s yeast

Thanks, Jessie! My husband just mixes a pint of heavy whipping cream with 1/4 cup Xylitol (or to taste) with a teaspoon of vanilla and pours it into our isi whipped cream container and it’s good to go!

Your eats look really good (and healthy)! Do you like the taste of Brewer’s yeast? I tried it recently & put 2 tbsp in my oat bran & I really had to choke it down! Maybe I just put way too much in there. I know it’s SO good for you & full of so many nutrients, that’s why I try to incorporate it, but… eh. Maybe I need to try little bits. 😉
I’ve been loving salads w/fruit lately, along with my beloved kabocha squash creations.
Ooh, I love squash salad creations, especially with roasted butternut squash!
I do like the taste of brewer’s yeast, but on veggies or popcorn. I haven’t tried it on anything else. However, if I put a little too much, the taste can be a little strong!
We’re big fans of bison burgers, and make them about once every other week or so. Especially with it being “grilling season”, we are making a lot of our meals using the grill.
Yes, we love bison burgers, too! I definitely prefer bison over grass fed ground beef. Once we move, I can’t wait to start grilling again!
Isn’t moving really the worst thing in the world? No matter how many times you do it, it’s always stressful and you always seem to hit a few SNAFUs.
Being fueled by all of this delicious food would definitely lift my spirits, though! Looks amazing 🙂
