Happy Hump Day! I hope everyone’s week is going well!
Since it’s Wednesday, it is for another round of What I Ate Wednesday, linking up with the lovely Jenn at Peas and Crayons.
I’m writing this early before I’ve eaten anything today, so I’m going to share my eats from yesterday, including a tasty new pancake recipe that I’m excited about!
Breakfast:
Green Flax Banana Nut Pancakes with my new coffee favorite, black coffee (either espresso from my stove top percolator) or french press with 1-2 tablespoons of half and half. It is so rich and creamy, that I don’t have to add any Xylitol or other sweetener and it only costs 40 calories!
Lunch:
A hearty salad with leftover sun dried tomato sausage from the night before, tomatoes, avocado, carrots, marinated artichokes and sprouted pumpkin seeds with a little olive oil and garlic wine vinegar.
Snack:
A half of a banana with a tablespoon of almond butter and a strawberry citrus Drink Chia. Sorry, I forgot to take a picture!
Dinner:
Pseudo Eggs Benedict with roasted asparagus on the side. Though it’s not in the picture, my husband and I split of slice of P28 Foods bread (review and giveaway coming very soon!) for soaking up the egg and sauce; it was SO good!
Well, that’s it for now. We have a busy day ahead of us starting with Keenan’s swim class, so I better get going. Enjoy your Wednesday!

Are you an asparagus eater? If so, how do you like to prepare it?
Grilled asparagus is my favorite . . . although, I’m not too picky. I really enjoy asparagus as long as it’s not over-cooked. 🙂

I have tried making the hollandaise before with coconut oil and it didn’t turn out well at all. For some reason the consistency wasn’t right or the flavor. Just be warned. If you do try it and succeed though I’d be interested in knowing how it turned out and what you did that maybe I screwed up.
FYI Instead I make it with the Smart Balance with Flax instead. Still not extremely healthy but slightly better.

We’ve been having breakfast type meals for dinner a lot more lately. I used to not really be a fan but now that we’re both doing paleo sometimes it’s just a yummy easy way to get in some protein and veggies! Funny, I used to only eat scrambled egg whites but lately I’m enjoying them over medium. Weird!
That is too funny, we have been doing the same! I have never really been a “breakfast for dinner” type person, but I’m starting to like it!

LOVE asparagus. I usually roast it in the oven with some olive oil and seasoned salt or fun mix my uncle cooked up 🙂
