Happy Hump Day! Since my house is all clean, I’m looking forward to a much less busier day today starting with Keenan’s swim class this morning, followed by some play time outside!
Anyhow, since it is Wednesday, you know the drill…it is time to link up with the lovely Jenn at Peas and Crayons for What I Ate Wednesday!
Since I’m up bright and early this morning and haven’t eaten anything yet, here are my eats from yesterday:
Breakfast:
No Oat Oatmeal with leftover roasted butternut squash topped with a dollop of almond butter and a drizzle of pure maple syrup…YUM!
Lunch:
Strawberry and avocado baby kale salad with chicken, feta cheese and slivered almonds. I am loving baby kale right now!
Snack:
Half of a banana with a tablespoon of almond butter. Sorry, I always seem to be in a hurry when I eat my snacks that I forget to take a picture!
Dinner:
Our old, but delicious and easy standby, Mexican Chicken in the Crock Pot, with the addition of fresh cilantro!

One thing I’ve eaten today: lunch was a big salad, topped with shredded chicken and a curry/tahini dressing that I made last weekend. Followed by a piece of dark chocolate. 🙂

I love the no oats oatmeal! I’ll have to favorite that. We are spaghetti people when we don’t have anything else to make.

I love the addition of butternut squash to the No oat oats! Sounds delicious! Fish tacos is usually a go to dinner for us but during the summer it’s definitely grilled chicken and veggies!
The butternut squash was definitely a nice addition, as it was really good! Grilled veggies and chicken is our “go-to” summer dinner, too!
