With the start of walnut harvest last Saturday, it’s all about walnuts over here for the next 6-8 weeks, not to mention being a “walnut widow,” as my friend who is also a farmer’s wife calls it! My poor husband leaves at 6:20 a.m. and doesn’t get back until 8:00 p.m. at the earliest! It’s been a tough adjustment for all of us, especially since this is my husband’s first harvest (he has only been farming since May). So, in the spirit of walnut harvest, I thought for this week’s What I Ate Wednesday, I’d share some of my favorite walnut recipes.

I love walnuts (especially when roasted) and if you read my blog, you know that I use them in A LOT in my cooking. Walnuts are one of the healthiest nuts because they contain monounsaturated fats, healthy omega 3 fatty acids and are a great source of protein.

We use walnuts for cooking, baking and snacking in our house. They are pretty much an everyday staple and thankfully, we grow them or they would be too costly to consume on a daily basis. In case you are wondering where our walnuts go, they all go to Diamond Walnut. So, the walnuts that you see in the store could be from my family’s farm!

My favorite way to eat walnuts is to roast them and sprinkle on my salads, but my ultimate favorite is candied walnuts that we make at Christmas! Anyhow, here are a few of my favorite walnut recipes…
