Morning and happy hump day!
It’s been a while since I posted a typical day of eats for What I Ate Wednesday, so I thought I’d go back to that with what I’ve been craving lately. Thank you Jenn, for always hosting!
Here is what I’ve been craving stuffing my face with the past couple of weeks…
Breakfasts:
Egg in a hole (love this kid-friendly breakfast that Keenan has fun making with me!).
Lunches:
Loaded wraps with a ton of veggies on P28 High Protein Flat Bread.
Snacks:
Pub mix from Costco. Prior to being pregnant, I would NEVER buy this, but as I walked by it the other day, it looked SO good!
Dinners:
Dishes loaded with a ton of veggies, such as this simple broccoli stir-fry that I threw together over quinoa last night. It hit the spot!
After dinner sweet:
Dark chocolate covered super fruit.

We used to buy that pub mix at work – it is seriously addictive!!!
It definitely is!
Egg in a hole!! Yes! That’s one of my favorites. And I can even tolerate it without a runny yolk now that I’m pregnant! Though I miss runny yolks more than just about anything – even wine!
It is such a good breakfast! I still eat it with a slightly runny yolk, even though I’m pregnant!
I don’t know how you did it, but you made that wrap look incredible. Mine never seem to stay put so perfectly when photographing, Ha Ha!
Curious: how did you make the stirfry? I may just have to add that for one of our meals next week
Favorite snack lately: Carrots & nut butter. YUM
Haha, I took that picture so quickly, just before it started to fall a part! For the stir-fry, I just threw everything together, really. I sauteed garlic with the onions first and then added the bell pepper, broccoli and cooked chicken. I added a mixture of low-sodium soy sauce, fish sauce, sesame oil and spices for the flavor and put it on top of quinoa.
I haven’t tried carrots with nut butter, but that sounds good!
I luv that pub mix…but they don’t sell it at the Costco’s here in Canada – so I try and enjoy it when I can in the US
Oh, that is a bummer! I have to say it would probably be better if our Costco didn’t carry the pub mix either, because it is so addicting!
