If you follow me on instagram, you probably saw that I finally perfected my cauliflower pizza crust recipe for our “at home date night” last weekend.

I had made a couple of cauliflower crusts in the past, but I had failed to squeeze all of the liquid out (the most crucial step!), thus making the crust soggy and only edible by fork. This pizza finally held up to the “hand test,” and was able to be eaten without a fork!! It was crispy on the edges and soft on the inside…

After finally getting my crust right, I don’t think I can eat cauliflower any other way. This is by far my favorite (and my family’s favorite) way to eat it. When I’m craving pizza, I will certainly be making this, and not feel guilty about eating half of it!

Cauliflower Pizza Crust

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Yield: 2-3 servings

Cauliflower Pizza Crust

Ingredients

  • 2 medium heads of cauliflower
  • 1 cup parmesan cheese (grated)
  • 2 cups mozzarella (shredded)
  • 2 eggs
  • 2 tsp Italian seasoning
  • 2 tsp garlic powder
  • pinch of salt and freshly cracked black pepper
  • *toppings of your choice

Instructions

  1. Preheat oven to 425 degrees and place parchment paper on a pizza pan or cookie sheet.
  2. Wash and chop cauliflower. Place chopped cauliflower into a food processor and "rice" (pulsing until it resembles rice). Place pulsed cauliflower in a microwave safe dish and microwave on high for 8 minutes.
  3. Remove cauliflower from microwave and allow to cool.
  4. Once cool, place cauliflower in a very thin towel or cheese cloth, and squeeze out all of the liquid (about 1 1/2 - 2 cups).
  5. Place cauliflower into a medium bowl and add the rest of the ingredients (setting aside 1 cup of mozzarella cheese).
  6. Mix well and using your fingers, press onto the parchment paper on your pizza pan in the shape of a circle (or whatever shape you would like).
  7. Bake for 23-25 minutes, until golden brown.
  8. Add your favorite sauce, toppings and the rest of the mozzarella cheese and bake for an additional 15 minutes, or until the cheese is browned and bubbly. Enjoy!
