This is very similar to the regular Grilled Cabbage Salad that my husband makes, except it is with Asian spices and my favorite, a peanut dressing!
Grilled Cabbage Salad With Spicy Peanut Dressing
Ingredients
- Salad:
- 1 large head of green cabbage
- 1/2 bunch of green onions (diced)
- 2 large carrots (thinly sliced)
- 1 red bell pepper (sliced)
- 1 yellow onion (diced)
- 1 big handful of cilantro, stems removed (or to taste)
- 2 skinless and boneless chicken breasts or thighs (marinated and grilled)
- Chicken Marinade:
- 2 Tbsp sweet chili sauce
- 1/3 cup water
- Dressing:
- 3/4 cup peanut butter
- 1/3 cup water
- 3 Tbsp hoisin sauce
- 2 Tbsp lemon or lime juice
- 3 tsp soy sauce
- 1 Tbsp Xylitol
- 3 tsp chili garlic paste
- 1 clove garlic (minced)
- 1/2 tsp toasted sesame oil
Instructions
- Add chicken to a zip lock bag and add chili sauce and water. Let marinade for at least 30 minutes.
- Heat grill to med-high (or high, if you can watch it), and let it pre-heat for at least 10 minutes.
- Standing cabbage on its stem, slice it into 1-inch-thick disks (don't cut the stem out, as it will help hold things together on the grill).
- Place cabbage on grill and cook about 4-6 minutes per side. Add chicken to grill and cook for 5-6 minutes per side. Once cabbage is done, set aside to cool.
- When chicken is done, cover with foil and set aside.
- Once cabbage is cooled, chop and place in a large bowl. Add rest of vegetables and cilantro.
- Meanwhile mix dressing ingredients together in a small bowl and pour over salad. Toss well.
- Slice grilled chicken.
- Divide salad among two plates and top with slices of chicken. Garnish with leftover cilantro. Enjoy!
